Tortilla Wraps with Ground Beef: My Go-To Dinner When Life Gets Busy

These quick, flavorful ground beef tortilla wraps (or burrito-style wraps) are perfect for hectic weeknights. Ready in under 30 minutes, customizable, and always a hit with the family. Seasoned beef, fresh veggies, and melty cheese wrapped in a soft tortilla – simple, satisfying, and no fuss!

Ingredients (for 4–6 wraps):

  • 1 lb (450 g) ground beef (lean or regular)
  • 1 small onion, finely chopped
  • 2–3 garlic cloves, minced
  • 1 packet (about 1 oz / 28 g) taco seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, salt & pepper)
  • ¼–½ cup water (to help the seasoning coat the meat)
  • 4–6 large flour tortillas (burrito-size, about 10-inch)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Optional fillings/toppings:
    • Shredded lettuce
    • Diced tomatoes
    • Salsa or pico de gallo
    • Sour cream or Greek yogurt
    • Sliced avocado or guacamole
    • Jalapeños or hot sauce
    • Cooked rice or black beans (for extra bulk)

Instructions:

  1. Cook the beef: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon as it cooks (about 5–7 minutes). Drain excess fat if needed.
  2. Add the chopped onion and garlic; sauté for 2–3 minutes until softened and fragrant.
  3. Stir in the taco seasoning and water. Simmer for 3–5 minutes until the mixture thickens and the flavors meld. Taste and adjust seasoning if needed (add more salt, chili, or cumin).
  4. Warm the tortillas: While the beef simmers, warm the tortillas in the microwave (wrapped in a damp paper towel for 20–30 seconds) or directly over a gas flame for a few seconds per side to make them pliable.
  5. Assemble the wraps: Lay a tortilla flat. Spoon a generous portion of the seasoned ground beef down the center. Add cheese (it will melt from the hot beef), then layer on your favorite toppings (lettuce, tomatoes, salsa, etc.).
  6. Fold and roll: Fold in the sides of the tortilla, then roll tightly from the bottom up to enclose the filling (burrito style). For extra crispiness, heat a clean skillet over medium heat, place the wrap seam-side down, and cook 1–2 minutes per side until golden.
  7. Slice in half if desired, and serve immediately with extra salsa, sour cream, or chips on the side.

  • Prep the beef ahead: Cook a big batch and refrigerate for 3–4 days or freeze for quick meals.
  • Make it even faster: Use pre-chopped veggies or skip the onion/garlic if you’re short on time.
