Baked Apple Fritters

These are soft, cake-like apple fritters baked (not fried!) with plenty of juicy apple chunks and finished with a sweet vanilla glaze. They look exactly like the ones in your photo — rustic scooped mounds with visible apples and a beautiful white drizzle.

Ingredients

For the Fritters:

  • 2 cups (250 g) all-purpose flour
  • ¼ cup (50 g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ⅓ cup (75 g) unsalted butter, melted
  • 1 large egg
  • ½ cup (120 ml) whole milk (or any milk)
  • 1 teaspoon vanilla extract
  • 2 medium apples (preferably Granny Smith or Honeycrisp for tartness), peeled and diced into ¼-inch pieces (about 1½–2 cups diced)

For the Glaze:

  • 1 cup (120 g) powdered sugar
  • 2–3 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix the dry ingredients. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. Mix the wet ingredients. In a medium bowl, whisk the melted butter, egg, milk, and vanilla extract until smooth.
  4. Combine. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or spatula just until combined. The batter will be very thick and lumpy — that’s perfect! Do not overmix.
  5. Add the apples. Gently fold in the diced apples until evenly distributed throughout the thick batter.
  6. Scoop the fritters. Using a large spoon or cookie scoop (about ¼ cup per fritter), drop generous mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart. They will look irregular and rustic — just like in the photo.
  7. Bake. Bake for 12–15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Make the glaze while the fritters bake. In a small bowl, whisk together the powdered sugar, 2 tablespoons milk, vanilla, and optional cinnamon until smooth. Add a little more milk if needed to reach a drizzling consistency.
  9. Glaze the fritters. Remove the fritters from the oven and let them cool on the baking sheet for 5 minutes. Drizzle the warm fritters generously with the glaze (it will set as they cool).

Tips

  • For extra flavor, you can add ¼ teaspoon ground nutmeg to the dry ingredients.
  • Best eaten the same day while warm. Store leftovers in an airtight container for up to 2 days; reheat in the microwave or oven for a few minutes.
  • The fritters freeze well (unglazed). Freeze on a tray, then transfer to a bag. Thaw and glaze before serving.
