Low-Carb Bacon Cheeseburger Casserole

This Low Carb Bacon Cheeseburger Casserole delivers all the nostalgic, comforting flavors of a classic diner burger without the heavy carbs. By combining seasoned ground beef, crispy thick-cut bacon, a tangy sugar-free ketchup and mustard sauce, and plenty of sharp cheddar cheese, you get a family-friendly meal that is incredibly easy to assemble.

Ingredients

  • 2 lbs Ground Beef 80/20 blend
  • 8 slices Thick-Cut Bacon chopped
  • 1 medium Yellow Onion diced
  • 3 cloves Garlic minced
  • 4 oz Cream Cheese softened
  • ¼ cup Sugar-Free Ketchup
  • 2 tablespoon Yellow Mustard
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 4 large Eggs
  • ½ cup Heavy Whipping Cream
  • 2 cups Sharp Cheddar Cheese freshly shredded

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Crisp the Bacon: In a large skillet over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and drain on a paper towel. Keep 1 tablespoon of bacon grease in the pan.
  • Brown the Meat: Add the diced onion to the skillet and sauté for 3-4 minutes. Add minced garlic and cook for 30 seconds. Add the ground beef, break it apart, and cook until browned. Drain any excess grease.
  • Create the Sauce: Reduce heat to low. Stir in the softened cream cheese, sugar-free ketchup, mustard, Worcestershire sauce, salt, and pepper. Simmer until the cream cheese is fully melted. Stir in half of the cooked bacon.
  • Whisk the Binder: In a small bowl, whisk the eggs and heavy cream until perfectly smooth.
  • Assemble: Spread the ground beef mixture evenly into the prepared baking dish. Pour the egg and cream mixture evenly over the top.
  • Add Toppings: Sprinkle the shredded sharp cheddar cheese and the remaining cooked bacon over the entire casserole.
  • Bake: Bake uncovered for 20-25 minutes until the cheese is melted, golden, and the casserole is bubbly around the edges.
  • Serve: Let the casserole rest for 5 minutes before slicing and serving. Garnish with fresh parsley or extra pickles if desired.
